two large onions two hard-cooked eggs salt to taste
Bake liver until done. Fry sliced onions in a little oil unti} they change color and are well done. Through a meat grinder put In first liver and onions, potatoes, eggs, and celery last. Chop fine, adding either chicken soup or water saved from the potatoes. This can be done several days in advance and placed in freezer, except do not add salt until ready to serve. For cooking the eggs, keep water Just under boiling to keep them tender, for twenty minutes.

KASHA PUDDING
three cups cooked kasha one-half cup sugar
one-half teaspoon salt, or less one-quarter cup brown sugar
one-half cup butter three eggs
two and one-quarter cups milk one teaspoon baking powder
one cup seedless raisins one teaspoon vanilla
Mix kasha, brown and white sugar, salt, melted butter, eggs, baking powder, and raisins; add milk, and vanilla. With melted shortening grease a pan, eight inches by twelve inches. Pour in mixture, and bake at 375 degrees for one hour, until brown.

a MISH-MASH
Now that I'm on Broadway, my friends ask me, "What's the difference betwten Broadway and Second Avenue?" I answer them in one word. "Money." On Broadway, everything's a production. For ipstance, the musical I'm in now, "Milk and Honey," they tell me cost $400,000 before the curtain even went up. On Second Avenue, we would have been happy to take IN that much at the end of a long successful run.
Which reminds me of a story my cousin used to tell. Her husband never made; more than a modest living. Once, after having had dinner at his boss's house, he came home raving. "You should see the house Mr. Werner lives in. And food. Is his wife a cook! She made a tzimis (that's a Jewish souffle) out of eggs and honey and cream and cheese and I raisins. Why can't you cook like that ?" To which my cousin replied, "I can. Just give me money for eggs." "Leave out the eggs," he cried. "But I have to buy the honey," she said. "Who needs honey?" Well, as you've guessed by now, she was forced to make the tzimis wihout the eggs, honey, cream, cheese and raisins. When she put it in front of him he took one taste and said, "Pfui! This is what rich people eat?"
I've often wondered what my poor cousin did put into that tzimis. You know, you can't make something out of nothing. The more I serve Rokeach Gefilte Fish, the more I realize it. Believe me, there's a dish that's something. Naturally, Rokeach doesn't skimp on ingredients. They use only fresh-caught whitefish, carp and pike... the very finest. Then it's seasoned and cooked just right, and you get it with plenty of that jelled broth for which Rokeach is so famous. Who ever heard of a traditional Friday night dinner without gefilte fish? Or, for that matter, without chicken soup with inatzo balls? That's another wonderful Rokeach specialty. But don't get me started. Like any woman, I never know when to stop.
