EGGPLANT FRITTERS
one eggplant one teaspoon salt two eggs
six tablespoons flour four tablespoons water melted shortening
Slice unpeeled, two pound eggplant into one-quarter inch rounds. Sprinkle lightly with salt. Place a heavy plate over eggplant and weight down if necessary. Let stand 30 to 45 minutes. Drain well, and dip in batter made of beaten eggs, salt, flour, and water. Fry in deep, hot, melted shortening till light brown. Turn and brown on other side. Drain well. This serves six.

PURIM PRUNE HAMANTASCHEN
three eggs one cup sugar
three-quarters cup oil four cups flour
four teaspoons baking powder juice of one large orange
Beat eggs, adding sugar gradually. Add oil, and beat until well blended. Add flour and baking powder which have been sifted together twice, alternately with orange juice. When easy to handle roll out dough on a well-floured board to one-eighth inch in thickness. Cut in two-inch rounds or squares.
Filling
one pound prunes one-half pound raisins
one-half cup walnuts juice and rind of one lemon
one teaspoon sugar (optional)

Soak prunes for one hour, then drain. Pit them and grind through mincer with nuts and raisins. Add lemon juice and rind and mix well. Place one tablespoon of filling in centre of dough. Fold over and seal edges in triangular shape. Brush with beaten egg before baking on a greased cookie sheet at 350 degrees for fifteen minutes, till golden brown.

Like so many fathers of his day, Papa had his heart set on a boy. I don't think he ever forgave me for being a girl. He� blamed Mama for it, and constantly referred to me as "Your daughter." When my sister Helen was born, it was more than poor Papa could bear. He said the whole world was against him, even his wife. Without a son, who would carry on the Pyekoon name?
Yes, Pyekoon was the name Papa came to America with, but one of my very first theatre managers simplified it to Picon. He said Picon would be much easier for people to remember. I'm sure he shortened it, though, to save on his electric bill when he put my name up in lights on the marquee. With such a simple name, why did I get so many letters addressed to Mali Pipkin, Maly Picnic, Moly Pippick, and many more, interesting variations?
That always reminds me of the delightful story Sholem Aleichem tells about a little boy named Dick. When his teacher asked him how a Jewish boy got the name Dick, he answered, "My name was Yitzchok, but the other kids made fun of me, so my Pop changed it to Dick." "But how did you get from Yitzchok to Dick?" she asked. "Oh, that was easy. We changed it from Yitzchok to Itzy, Itzy to Pitzy, Pifzy to Ritzy, Ritzy to Richard, and Richard \o Dick."
