steam cooker and huge automatic oven for the job. But in spite of the modern machinery, much of the actual preparing and finishing of these cakes is by hand. The final shaping of the moon cake is by inserting the dough wrapped mixed ingredients into a wooden mold and pressed into the traditional shape.
A moon cake is round, lV high, 3 M" diameter and a box of 4 of them weigh 1 lb. 10 oz. There are a few special moon cakes 10 to 12 inches in diameter, but the most popular are the smaller size. More than 20 varieties of moon cakes are made with only the finest ingredients used.
There are 5 basic types of material~-sweetened black bean (dow sah), lotus seed (lin yung), fruit with meat and nuts (gum tu), yellow bean (dow yung), and winter melon (doong yung). These, used in conjunction with single, double or triple egg yolks, coconut, various types of pickled meat, ham, nuts and seeds, and other fruits make up a delectable list of moon cakes which are relished by Chinese everywhere.

First Chinese Canadian entry in Miss PNE contest is pretty Nedra Chew, 18, who won the Miss Mount Pleasant Crown. Daughter of Mrs. Catherine Chew, 111 East 27th, the four feet, 11 inch queen has brains to match her looks. She was winner of a $250 scholarship for being the best Junior Achiever in B.C. Nedra plans to use the money when she goes to UBC to study law this fall. The dimpled lass will be more than adequate in the talent division as she is quite an accomplished painter and writes poetry in her spare-time. Last year she was the president and production manager of United Telepad, a Junior Achievement of B.C. company. Her statistics? 30-2034.
