one cup of sifted pastry or
cake flour two teaspoons baking
powder
one cup corn starch one-quarter teaspoon salt
two eggs
one-half teaspoon vanilla
one-half cup butter or
margarine three-quarters cup fine
fruit sugar
Pre-heat oven to 350 degrees; grease well, two large cookie sheets. Sift dry ingredients; blend softened butter or margarine with sugar; add well-beaten eggs; then beat in dry ingredients. Drop by small teaspoonsful on the prepared cookie sheets; flatten slightly, and bake for fifteen minutes, or until edges start to turn brown, then remove from pans and cool. Put together with jam, plain butter icing, or lemon cheese filling. This recipe yields about thirty double cookies.
Lemon Cheese Filling
rind of one lemon one tablespoon butter or .
three tablespoons lemon margarine
juice one slightly beaten egg
1 one-third cup sugar
Combine ingredients and cook in double-boiler over wakw, stirring until thick. Cool and spread between cookies.

Heat one-half cup milk to simmering point. Keep aside a little of this and when it is lukewarm sprinkle in it one envelope dry yeast, and one teaspoon sugar. Let stand ten minutes. Stir. Let stand two more minutes until dissolved. To rest of simmering milk, add one-eighth pound butter; one-half cup sugar, less the one teaspoon sugar used as above; and one-half teaspoon salt. Turn off heat. Add one-half cup cold milk. Put all of this into large mixing bowl, with dissolved yeast mixture. Than add two beaten eggs and three cups flour (a trifle more if required). Mix well with wooden spoon, not by hand. Let stand in warm temperature, until more than doubled in size, about three hours. Turn'out on floured board; cut into small pieces; and roll out. Brush with melted butter, and sprinkle with sugar and cinnamon; and raisins, if desired. Handle dough as little as possible. Roll into any small form or shape desired and let stand twenty minutes in greased baking pan. Just before putting into oven, brush the buns with well-beaten egg to give a brown, shiny iinish. Bake for a least twenty minutes, in a moderate oven, about 350 degrees, or until browned.
