YOGURT IS NEW POPULAR HEALTH FOOD
Yogurt, the national food of Bulgaria, which started out as a gourmet's delight, has developed into a nationally^popular eating habit in Canada. This new accompaniment to the diet is a milk preparation infected with a special bacillus, which the Bulgarians believe responsible for the fact that itis not uncommon for men in their country to live to be 110. Dr. A. Donoff, a forty-two year-old Bulgarian doctor who operates the Montreal North factory of Vita-Yogurt Products, eays that Illia Metchnikoff, the great Russian-biologist,; first spotted the value of keeping Bulgarians hearty and healthy. Yogurt is used in all hos-piCab in Bulgaria as a regular part of the daily diet. Here, yogurt is commonly eaten as is, in six-ounce portions, and topped with maple syrup; or used as a topping for salads, jelly desserts, fruit, etc. Professor Assen Todoroff Ka&-tardjieff, former director of tie Institute of Dairy Bacteriology, at the University of Sofia, makes his own cultures in Montreal. He says that consumption of this product is mounting all the time; and that ten thousand jars a day, at least, will be eatea in Montreal.
