GELATINE PIE
two packages gelatine powder
one tin evaporated milk two teaspoons sugar
Gelatine should be divided into two colors and flavours, one lemon or pineapple, and the other, strawberry or cherry. Prepare gelatine separately in two mixing bowls, adding two teaspoons sugar and one cup boiling water to each package. Mix thoroughly, cool, and let stand in refrigerator until halfway chilled. The evaporated milk must be left in refrigerator over night. Divide it in half, and pour one half into large bowl of electric mixing machine. Beat at number eight speed and whip until milk is of consistency of whipped cream. Change speed to slow rate, number three or four, and pour light-colored gelatine into whipped milk, slowly, and mix together. Line two pie-plates with cake crumbs or biscuit crumbs, and pour half of light-colored gelatine and milk mixture into each. Repeat same procedure with other half of evaporated milk, and dark-colored gelatine, and pour over light-colored mixture already in pie-plates. Place pie-plates in refrigerator to cool and set, and cut in wedges, as with a pie, immediately before serving. This recipe makes two pies, at a cost of only thirty cents.
