* What shall 1 buy—fresh or frozen*? Whole .turlceys "are available both fresh and'fro-izen; ^Fresh:;tjurkeysy must be refrigerated at all times and; cooked within onetotwodays -after purehasingr-'^
Frbzen turkeys can be stored ia their, original wrapper at zero degrees Fahrenheit or below for up to 12 months. But frozen turkeys requirepre-planning to allow time for, thawing. To thaw, place the turkey, in its original . wrapper,' oh a tray in the refrigerator, allowing 24 : hours, of thawing • time for each five pounds of bird. • Once thawed, remove the ^ plastic wrapper^Temove the giblets and neck from th^ body* cavity. Rinse the bird with cold water and pat.dry ,with a paper towel.
To stuff or not to stuff? If a stuffed turkey is desired, the time to stuff the bird is right before it goes into the oven. Have ready enough stuffing to equal three-quarters of a cup per pound of turkey for birds weighing more than 10 ^pounds; half cup for smaller birds.
Do not freeze, stuffing in either a cooked or uncooked turkey. If stuffing is not wanted; the inside of the body cavity of the bird can - be seasoned with a mixture of salt, pepper, poultry seasoning and onion salt.
: Brush the skin of the turkey with oil and it's ready for the oven.
To roast the turkey; place it in a shallow roasting pan at 325 degrees: Fahrenheit. Cover loosely with a foil tent. As a general guide, it takes about 22 minutes per pound to cook.
As a test of doneness; the drumstick-thigh joint should move or break easily and the drumstick should be tender to the touch:
