Commemorates Judith and Holofemes
Many people eat dairy foods on Chanukah. This custom arose to commemorate the story of Judith and Holofernes.
Holofemes, an Assyrian -general, was besieging the town of Bethulia. Judith, pretending to befriend him, plied him with cheese, to make him thirsty. To quench his thirst, he drank enough wine to become drunk, whereupon Judith killed him.
Weight Watchers" sends along these recipes, which
•are not only dairy, but low calorie as well.
ALMOND-NOODLE KDGEL
Makes 4 servings .
2 cups cooked-wide, mxxlles
12 dried apricot halves,
chopped 1 tbsp'granulated sugar 1 tbsp margarine, meltal,
divided
3 eggs • .: % cup apricot nectar
3 tbsp whipped cream cheese
1 tsp vanilla extract 4 graham crackers (2'/2-inch squares), made into crunibs Vi ounce whole almonds, toasted and ground Preheat oven to 350F. Spray nme-inch baking 1 dish or quiche dish with nonstick cooking spray; add noodles, apricots^ sugar, and two teaspoons margarine and sejt aside.. ^ ■ In blender process eggs, nectar, cheese, and vanilla on medium speed until smooth; pour over noodle
mixture. In small mixing bowl' combine" graham cracker crumbs, almonds, and remaining margarine; sprinkle over noodle mixture. Bake until mixture is set, about 20 minutes.
Each serving provides: 1 Protein Exchange; 1 '/i Bread Exchanges; 1 Fat Exchange; 114 Fruit Exchanges; 40 Optional Calories.
CHEDDAR BOW TIES
Makes 12 servings, 4 bow ties each VA cups all-purpose flour 14 pound Cheddar cheese, shredded I tsp double-acting baking powder cup each granulated • sugar and margarine
2 eggs
1 egg white, lightly beaten -
In medium mixing bow! combine flour, cheese, and-baking powder, stir well and set aside. . .
Using mixer on high speed, in large mixing bowl beat together sugar and margarine until light and fluffy; add eggs, one at a time, and beat until thoroughly^blended. Stir in mustard; add flour mixture and stir until mixture forms soft dough.
Preheat oven to 375F. Divide dough in half and shape each half into a ball. Roll dough ball into a rectangle about 1/8-inch thick; cut into 24 4 x 1-inch strips. Spray baking sheet with- nonstick cooking
sprayv twist' each strip' of dough in centre forming a bow tie and arrange on sprayed sheet.-U.sing half -of-the egg white, brush each bow tie with an equal amount of egg white and bake untill golden brown, 12 to 15 minutes. Transfer to wire rack and let cool. Repeat procedure using remaining dough and egg white, making 24 more bow ties.
Each serving provides: '/^ Protein Exchange; 1 Bread Exchange; 1 Fat Ex-change; 20 Optional Calories.
FRUIT SALAD WITH HONEY-POPPY DRESSING
Makes 4 servings 4 cups shredded lettuce

% pound oranges, peeled
and sliced 6 ounces kiwi fruits, ■ pared and sliced ,2 tbsp each diagonally thinly^'sliced scallion (green onion) and lemon juice 1 tbsp plus 1 teaspoon l>eanut or walnut oil 1 tbsp honey Vi tsp poppy seed Dash salt
On,-serving platter arrange lettuce; decoratively arrange fruits over lettuce and top with scallion. In small mixing bowl combine remaining ingredients; pour over salad.
Each serving provid^: 2 Vegetable Exchanges; 1 Fat Exchange; 1 Fruit Exchange; 20 Optional Calories.
