a fresh or pickled tongue one stalk celery
four or five onions one-half pound black olives
one-half pound mushrooms salt and pepper
two cups water
Cook tongue in the water until half-done. Keep the water in which tongue was cooked, and if the tongue was pickled, the water may be strained. Remove skin from tongue, and slice thinly. Combine the onions, mushrooms, and celery, and fry partially. Then put this mixture into the juice in which the tongue was cooked, and add the tongue, black olives, and salt and pepper to taste. Tomatoes may also be added if desired, but are not necessary. Cook over a slow fire until very tender (about two hours). Then put in casserole, and leave in oven until about half an hour before serving. It may be served on rice or corn meal mush.

Beat egg yolks, and add sugar; then Hour sifted with baking-powder. Add lemon and orange juices and rind. Add oil, and mix carefully, and lastly, fold in stiffly-beaten egg-whites. Bake in an eight-inch square tin, lined with wax paper, in a 350-375 degree oven, for thirty-five minutes. Oil only can be used; this recipe will not be successful if other shortening is substituted
for it.

Melt one tablespoon butter; beat in icing sugar, and rind and juice of half an orange.
