STRUDEL
two cups of flour one-third cup oil three-quarters cup warm water
pinch of salt
four teaspoons powdered sugar
Place flour on board or in deep bowl, and make a well. Add salt, oil, and powdered sugar. Add three-c{uarters cup warm water, and keep patting until the dough becomes a ball. Add a little flour and keep slapping for fifteen minutes until the dough is smooth. Place dough in a slightly greased bowl and cover well with a clean cloth. Let this stand for one hour. The longer it stays the easier it will'be to stretch. Spread a tablecloth on the table; sprinkle it all over with flour. Divide dough in two parts and sprinkle with flour. Roll dough a little and cover with the ends of tablecloth for ten minutes. Start rolling again and stretching the dough until it becomes as thin as tissue paper.
Filling
one pound crushed walnuts two cups of sugar one cup wine one pound white sultana raisins
two cups bread crumbs two lemons, juice and rind two pounds Turkish' Delight one jar of Maraschino cherries (sixteen ounces)
In a large bowl place all ingredients except the Turkish Delight. Make certain that the mixture is moist. When the dough is stretched out, line up the filling along the table at one end. Sprinkle the dough sheet with a little oil and icing sugar. Cut the Turkish Delight into half-inch pieces and place on top of filling. Take an end of the tablecloth and roll up the dough. Then cut it in lengths according to the size of the baking pan. Bake at 300 to 325 degrees for twenty minutes. Cut into pieces when required. Set in the refrigerator well-covered; strudel will keep for a long time.
