one-quarter cup water two beaten eggs one teaspoon salt one-quarter teaspoon ground ginger

one-quarter teaspoon pepper
Crumble matrons, sprinkle with water. Add other ingredients, and mix well. This may be used for chicken, or for any meat. For variety, spread stuffing on thin slices of veal or steak, roll up, and fasten with a toothpick. Sear, add a little water, and bake until done. If using chops, they must be over one-inch in thickness, split across, filled with stuffing, seared and baked until well done.

COTTAGE CHEESE BALLS
one-half pound cottage one teaspoon sugar
cheese one-l�alf cup matzah
one tablespon thick cake meal
sour cream pinch of salt
two small eggs Mix cheese and eggs and add meal Add sour cream, sugar, and salt. Roll into little balls, and boil until tender in salted water. Fry cake meal in butter until brown, and put the cheese balls in this mixture. Bake for fifteen minutes in oven, 375 degrees. To vary, roll cheese mixture around prune before boiling. If fruit is used, use an additional tablespoon of meal an the cheese mixture. This recipe may be used* with flour when not required for Passover.

PASSOVER KNAEDLACH
one cup matzoh meal four level tablespons chicken
four eggs fat
salt and pepper.
Beat eggs, add matzoh meal, salt and pepper, and lastly the chicken fat. Mix well. Let stand for fifteen minutes. Make balls the size of walnuts. Drop them into boiling salted water. Cook for half an hour.

GLAZED APPLES
one and one-half cups two cups water
granulated sugar six apples
Make syrup of sugar and water. Core apples and pare about one and one-half inches down from stem end. Place in syrup with pared surface down and simmer for five minute*. Invert and roofc^mtil tniwiar, about ten cc fifteen minatea When tender, place under hot broiler flame and baste frequently with synip until well glazed. Serves six. PASSOVER KNAEDLACH
Mix in enough hot water to two cups of matzoh meal so that the dough will be stiff; add four eggs, beaten well. Add one teaspoon of salt, pinch of pepper, and one tablespoon of fat. Mix batter after each addition, so that it is a smooth mixture, but not runny. Drop by spoonsful into a.two-quart pot of boiling water, and cook for ten minutes. Serve with soup.

MATZOH KLEJS
Beat two eggs and one-half cup of water together. Add three tablespoons melted chicken fat; salt, pepper, ginger to taste. Stir in three-quarters cujp of matzoh meal. Let mixture stand for several hours in frigidcdre. Form into balls, and boil in boiling salt water for twenty minutes to one-half hour. Pour off water, and boil in soup for another ten to fifteen minutes.

APPLE ALMOND PUDDING
two cups very thick apple- four tablespoons sugar
sauce, strained one-half cup chopped
one teaspoon lemon juice almonds
three egg yolks three egg whites
Flavour applesauce with one-hall teaspoon lemon juice and spread in shallow greased pan. Beat egg yolks very light, add sugar gradually and continue beating. Add chopped almonds. Mix well and fold in stiffly beaten egg whites. Add remaining lemon juice, mix. and spread this mixture over the applesauce. Sprinkle the top with a little sugcjr and a few slivered almonds. Bake in slow oven for three-quarters of an hour until brown. Serve hot or cold.
