APPLE DESSERT
Core and peel eix large apples; cook in very little water until slightly soft. Place the apples in a greased baking dish, and pour oyer the apples a batter, made of beating together three egg-yolks, one-half cup sugar and one-half cup of white bread crumbs; and folding in the beaten whites of three eggs. This makes a very fluffy batter. Bake in a moderate oven for about twenty to twenty-five minutes. Grated lemon rind and a little lemon juice may be sprinkled over the apples before the batter is poured on.

PRIZE BROILED CHICKEN
three small broilers one-half cup rice two tablespoons chicken fat one-half grated onion, or garlic
two cups cornflakes one teaspoon dry mustard pinch of sage one-quarter teaspoon Worcestershire sauce
salt and pepper Parboil rice, strain, add cornflakes and chicken fat. Mix thoroughly with Worcestershire sauce and dry ingredients. Chicken soup may be used instead of chicken fat as znoistener. In a flat pan slightly greased with chicken fat pat the above so as to bake flat for easy cutting. Over this lay the chicken halves which have been rubbed with onion or garlic and a bit of the dry ingredients as well as a bit of chicken fat.Put this in oven which is�auite cool and let bake for about twenty minutes after heat has reached 300 degrees. Pour giblet gravy over this. Serves six.
