Mix together two unbeaten eggs and one egg-shell lull of Add one teaspoon vanilla Then add one cup chopped walnuts; one cup raisins; one cup chopped dates; one cup white sugar; and then, three-quarters cup flour. Mix altogether, and pour in a greased eight-by-elght inch tin; and bake in a 355-degree oven, for thirty-five to forty-five minutes. When cool cut in squares.

ALMOND APPLE TORTE
two pounds hard apples two lemons one pound sugar one pound blanched almonds, dried and ground
one pound icing sugar three heaping tablespoons
flour six eggs almond flavouring
Peel, core and cut apples into eighths. Put sugar in saucepan with enough water to moisten. When melted, add apples and lemons which hare been peeled, halved, and sliced very thin. Cook until thick and transparent and no liquid is left Stir often, as it burns quickly towards end of cooking.
Beat the whites and yelks of egos separately. Sift the icing sugar. Combine all dry ingredients. Reserve one-half CUD of the mixture. To the remainder, add well-beaten yolks, fold in stiffly beaten egg whites, and flavouring. Put one-half of this mixture into well-greased pan, twelve inches by sixteen inches. Spread evenly. Bake in moderate oven. 350 degrees, until light brown. Spread apple filling, cover with rest of dough, smoothing evenly with a spoon. Sprinkle one-half cup reserved mixture on top. Bake again, half-way up in the oven, until well-done. For dainties, do not cut until next day. For dessert, decorate with glaced cherries and angelica to make a flower on each square.
