CLASS IN COOKERY
, PASSOVER SPONGE CAKE
twelve eggs, separated pinch of salt
one cup sugar grated rind of one lemon
one cup cake meal
Beat egg-yolks with sugar until soft and fluffy. Beat egg-whites separately, until very stiff, and fold into egg-yolk mixture. Add grated rind of lemon, and then the sifted cake meal, mixing very carefully. Pour into a greased pan, and bake in a 350-aegree oven for one hour, taking care not to open oven door during baking, otherwise cake will fall,
Mrs. S. Shift,
1640 Van Home Avenue, Montreal.
PASSOVER BAGLE
Combine one glass of chicken fat with three glasses of water, and boil. When it comes to a boil, remove from stove, and add matzoh meal, enough to make a thick paste. When cool, mash thoroughly, so that there are no lumps. Then add eggs, dropping in an egg at a time, until the dough is of the consistency to be rolled in the hands. Use salt and pepper to taste, or sugar (optional). Shape like doughnuts, with a hole in the middle, and bake in a greased pan, in a 400-degree oven, for half an hour. Then bake an additional fifteen minutes in 325-degree oven.
