The children's lunch kits usually present problems somewhere around this time of year, but perhaps they won't mind the monotony of the same varieties of sandwiches so much if you tuck in a few of these Honey Peanut Butter cookies for the peanut butter fans.
^ These cookies are about the only peanut butter recipe that I've found to be fairly popular with adults, too, who usually don't seem to be nearly as fond of this delicacy as the younger set. But the honey is what makes this recipe special and of course honey does impart a wonderful flavor and softness to almost any recipe in which it is specified.
The ingredients for these cookies make only about three dozen cookies you'll find, so •I usually double everything right from the start and then there's a worthwhile batch of baking in the house as these are a popular cookie.
And chilling the dough well, even to letting it refrigerate, covered,' over night is the secret of having a nice shape to these cookies.
HONEY PEANUT BUTTER COOKIES
Step 1—Mix together thoroughly:
cup soft shortening (half butter) V2 cup peanut butter V2 cup white sugar V2 cup honey 1 egg

Step 2 — Sift together arid stir in:
11/4 cups sifted flour V2. tsp. baking powder % tsp. baking soda tsp. salt
Step 3 — Chill the dough. Then roll in your hands into balls size of large walnuts. Place 3" apart on lightly greased baking sheets. Flatten with fork dipped in flour and then criss-cross to give the traditional peanut butter cooky look. Bake in a 375 oven for 10 to 12 minutes only until set, but not hard.
One of the nicest innovations for this cookie is to dip the balls into fine coconut before placing them on the baking pan. Then proceed to flatten them according to the. instructions. * This little touch of coconut gives an especially nice flavor to the cookie.
