fruit mixtures and even makes the best cookie-crust pies you can imagine. But a warning: it is very rich and soft and requires a little more patience and care in handling than harder dough. But it's worth the effort.; You'll be able to say to .your family and friends, "Here, try the best Hamantaschen you've ever tasted!" '
HAMANTASCHEN COOKIE DOUGH
Step 1 — Mix together thoroughly:
H cup* soft shortening (part butter is best)
1 cup sugar
2 eggs
Then stir in: 2 tbsp. thick cream and 1 tsp. vanilla.
Step 2 — Sift together and stir in:
2V2 cups sifted flour 1/4 tsp. soda V2 tsp. salt
Now chill the -dough for a few hours.
Step 3 — Roll dough thin (this is easily done with such a soft dough) and cut 3 to 4 inch rounds depending on how small or large you like ^he little hats to be (this recipe does not rise 'very much). Place a rounded teaspoonful of cooled filling on each round and fold up from the sides to form a three-eornered shape. Be sure your hands are well floured to seal the edges. Bake only until delicately browned (these stay quite pale) in a 375° oven for about 10 minutes.
SPECIAL FRUIT FILLING
Step 1 — Mix together in saucepan:
1 cup prunes,
(pitted and cut up)
14 cup raisins, seeded
V4 cup dried apricots cut up
V2 cup sugar
Vz cup water 1 tbsp. lemon juice
Step 2 — Cook slowly, stirring constantly until thickened (from 10 to 20 minutes). Stir in 3 tbsp. crushed walnuts and cool well before using as filling for Hamantaschen. This makes enough for about 2V2 to 3 dozen, so multiply according to your family's needs.
You now have a wonderful holiday treat for your Purim feast or Seudat Purim — a happy family dinner when food and drink are at their best and kreplach vie for attention with these tender fruity little three-cornered hats.
A happy holiday for the whole family — Chag Same-ach everyone!
