Happy New Year to all Bulletin readers. During this holiday season of ours, we begin to think about something extra special for winter entertaining. The one outstanding recipe that comes to my mind is a Hot Cheese Cake that really has a scrumptious taste.
It's made with dry cottage cheese and hence freezes well whether baked or unbaked. However, it's at its top notch best when baked and served hot, though I have baked it the day before (not too golden, of course) and re-baked it briefly before serving. The important thing is to serve this cake hot with cold sour cream.
To make this into real party fare. I place a brimming bowl of strawberries beside the bowl of sour cream. This combination on the Hot Cheese Cake is as always very special.
This Cheese Cake can replace such things on your dinner menu as cheese knishes ori cheese kreplach and makes a fine dessert-lunclieon menu or a splendid evening hour company treat.
- 2 beaten eggs; then mix well. Add to" this batter IV4 cups flour, Vz tsp. bdk-ing powder, a pinch of salt and 1 cup of milk. Step 2—Filling: Mix 2 cartons of dry cottage cheese with 2 beaten eggs, 2 tbsp. soft butter, a little
salt (to taste) and a little sugar (to taste).
Step 3—Grease an 8x8 Pan. Spread half the batter on bottom and spread filling over. Top with remaining batter, spread out to cover. Bake in a 350 oven until golden brown on top (takes 35 to 45 minutes).
This recipe cuts into nine good portions—but allow for second helpings! It's that good and if; you try it, you'll see what I mean.
