This Passover marks the fourth year we have carried The Bulletin's "Tried and True Knaidlach" recipe. It's been reappearing holiday after holiday because our ^ readers request it. And as one lady put it, "You can't make knaidlach wrong with , this recipe."
So, Knaidlach once again head our Pesach column this year. But another reader's been 'asking for something new in puddings this year to perk up Pesach meals and our Passover Carrot Pudding is a wonderful reply. It's moist, tasty and sure to be enjoyed by the family.
A new eggplant appetizer (good all year, by the way) will also help add variety to your holiday table and is easy to make. Big bonus from our Eggplant Caviar: 1 tbsp. amounts to only 10 calories! Recipe makes approximately 3 cup^.
BULLETIN KNAIDLACH
Step 1 — Pour i cup boiling water over 1 cup of Matzo Meal;and stir till all the Mat^ zo meal is absorbed. Add: 2-tbsp. chicken fat, 1 tsp. salt and 1 bpaten egg. Mix together well.
Step z — When the mixture is cool, refrigerate for at least 1 hour. Then shape into medium size round balls (don't make them too large and keep a glass of cold water at hand for dipping your fingers be-
fore shaping each ball.) Bring your soup to a boil and boil knaidlach, covered, in the soup for 15 minutes on a medium heat once full boiling is reached.
PASSOVER CARROT PUDDING Step I'— Mix together 1 cup cake meal, 1 tsp. salt, 2 tbsp. potato starch. Cream ^4 cup oil and '^A cup honey. Beat three egg yolks and alternately add egg yolks and dry ingredients to creamed mixture. Mix well.
Step 2 — Stir in 3 cups grated raw carrots. Fold in three stiffly beaten egg whites (beat with pinch salt to hold peaks).
Step 3 — Bake in well-greased mold or tube pan (9x "iVz) at 350 for 40 minutes. Serve hot or cold. Makes 6 servings. (If serving hot, and its to be served as a separate dessert, spoon over one tbsp. honey or jam on each serving).
EGGPLANT CAVIAR
^Step I — Peel and dice one small eggplant. Heat 2 tbsp. oil and sa_ute two chopped onions, the eggplant and two chopped green peppers. Cook 20 minutes, stirring frequently.
