WOMEN MUST KINDLE CHAHUKA LIGHTS
Pare 6 apples and cut into 1/2"^ si icesj anc core out centre. Mix 1/4 c. brandy and 1/8 tsp. cinnamon. Pour over apples and cover tightly, to. marinate fgf several hours. Separate 1 egg. Beat yolk and gradually add X/2 c. nriilk (or 1/4 cup non-dairy coffee cream and 1/4 cup water) and 2-tsp. granulated sugar.
Sift 1c. all purpose flour with 1/2 tsp. each baking powder, and confectioners' sugar; add to egg mixture and liquid drained from apples. Mix well. Blend in stiffly beaten egg white.
Dip apple slices in thisbatter, lift out with fork, allowing excess batter to drip back into bowl. Lower apple slices carefully into hot oil.'Fry until delicate brown..
Drain on absorbent paper. Sprinkle with confectioners' sugar and serve,b9t with jam or sour cream^ V
Fluffy Potato Lfltkes
4 large potatoes, pared
1 small onion
2 eggs
1/2 cup all-purpose flour
Itsp. salt "
1/B tsp. pepper
1/4 tsp. baking powder
Shortening or oil for frying
Sephardic Chanuka Latkes
Combine 1. yeast cake and 1 c/warm water until yeast puffs up tp surface.: Add ; 1-6 c. soft margarine and 1/4 tsp. salt. -Add enough flour gradually to make a soft dough. Let stand ' in warm., place for 3 hrs. Drop by; spoonful in hot oil about 1/4 inch: in depth. Fry to golden brown on both sides. They should puff into ..irregular shapes. Drain on paper lined colander. .
Serve hot dipped in orange syrup.
Orange Syrup:
Combine 2 tbsp. orange juice, 2 c. water, pinch of sugar and v 1 tbsp. brandy and simmer for 15 min.
Grate potatoes and onions into mixing bowl. Drain off excess liquid. Add egg's and beat loitil well-blended. Mix and sift together flour, salt, pepper and baking powder. Stir .into potatoes, mixing well.
Heat enough shortening or oil in. heavy skillet,. so that fat is at least 1-inch deep. Wh^n hot (378" degrees) drop potato batter by tablespoonfuls into fat. Fry on both sides over medium heat, until golden, crisp and puffy. Drain. _
Serye hot with applesauce, or for dairy meals, with sour cream. Makes approximately 1 1/2 dozen pancakes.
Note:~ instead of grating potatoes and onion, ian electric blender may be used. Dice potatoes and slice onion before adding to blender.

Combine 3 well beaten eggs, 1 c. milk and 1 c. cottage cheese. Sift together 1 c. flour, 1 tsp. biaking powder and 1/4 tsp. salt. Blend to smoothness and drop by spoonsful into hot^oi I in a frying pan. Cook to'delicate brown on both sides. Serve with jam, applesauce or sour cream.
Savory Meat Ldtkes Beet Latkes
Btond. together:
3 egg yoiiis, iightiy beaien
lb. ground beef . V4 tsp; baking powder % tsp. salt,
dash of pepper 1 tsp. lemon Juice 1 tbsp. minced parsley 1 tbsp. grated onion
Fold in: ^ 3 egg whites, stiffly beaten
Drop by spoonfuls onto greased hot frypan or griddle. When puffed and brown, turn and brown other side. Serve at once, with Mushroon Sauce or Curry Sauce or Tomato Sauce.
Amount: ,6 servings
1 cup finely chopped cooked fresh beets
2 (bopa. CGrriSilmOM:
4 large ega.yolks, beaten
3 tbsps. heavy cream or undiluted evaporated milk
% tsp. sugar 1 tsp. salt
"V^ tsp. ground nutmeg
Combine all ingredients in a mixing bowl. Mix welt and bake in pancake fashion on a hot buttered griddle or heavy skillet. Serve with fruit marmalade or preserves.
Yield: 12 pancakes
Cod Fish Latkes
Cook together in bQlHnQ water
1 oup codfish (soaked), shredded •
2 cups diced potatoes
When potatoes are soft, drain, mash. Add:
1 egg, beaten
salt and pepper
1 tsp. butter or margarine '
Form Into cakes.dip in flour, fry in deep fat, shortening or oil. Serve hot garnished with parsley.' Serves 8 Top with a zesty tomato or Curry Sauce. .
