"The Federation understands that the ability of a community to satisfy the kosher needs of all Jews is a central responsibility," stated Federation executive director Steven Drysdale. Beginning with Federation financial support for the kosher kitchen at the Vancouver Jewish Community Centre, a strict kashrut policy for Federation events, and the recent provision of kosher dishes, the Federation is fulfilling this responsibility, it was noted. It's Birchwood Dairies, whose owners have been farming in Sumas Prairie for about 22 years. "We are a family-run operation with a dream to see our products go to market,'' say the owners of the dairy, located in the heart of Abbots-ford. While farming in the. area, they built a dairy plant in which they're now able to prepare and package their own products. Birchwood's founding owners are Len and Grace Krahn. It's a real business, involving all the chilidren, married or in school. It was brought to Birchwood Dairies' attention last year that there was a real need for local kosher dairy products. Last winter, with the help of Yoseph Thomson, the Orthodox Rabbinical Council of B.C.'s kashrut administrator, Birchwood began preparations for having its plant certified as kosher. — Granted a kashrut certifica--tion in June, Birchwood is now functioning as a B.C. Kosher plant. Currently available in grocery stores is its kosher feta cheese — an Arabic white cheese made fresh on the farm from pasturized milk, rennet, lipase powder iand salt.' There are no artificial ingredients or color added. "The cheese is aged to perfection, then packaged in a salt brine," said a dairy spokesman. Birchwood's owners say "their feta cheese is excellent for added flavor on Greek or , any other salad, and that it's also "superb on pizza." Made "with yogurt lovers in mind," Yogi-Quencher is a drinkable yogurt Birchwood make from lebany. This Mediterranean yogurt uses a live culture added after pasteurization, resulting in a natural, low-fat product. To this is added all-natural fruit and fruit flavor, sweetened with a hint of honey. This, the dairy attests, "enhances the flavor beyond belief." Available in a 946-millilitre jug; Yogi-Quencher comes in strawberry, peach, blueberry and raspberry.
