MUSIC SERIES
The Canada-Israel Cultural Foundation kicks off its Amici series at the St. Lawrence Centre this Thursday, Dec. 2, at 8:30 p.m. Amici is a four-part musical series introducing three Israeli performers in their Toronto debut — pianist Uana Vered on Dec. 2; cellist Mischa Maisky on Jan. 31, and violinist Yuval YarononFeb. 24 — plus a film night on -Dec. 30, featuring Heifetz, Rubinstein and Piatigorsky. The series is presented in co-operation with Toronto Arts Productions at the Centre.
PEOPLE OF THE BOOK
Another big event on Thursday, the 2nd, is the Jewish Book Month symposium sponsored by the Jewish Public Library. It is a panel discussion on The Concept of the People of the Book with York University Professors Maynard Maidman. and Michael Brown, and Rabbi Reuyen Bulka, Congregation Mahzikei Hadas in Ottawa. Moderator is Rabbi Henry Hoschander of Shaarei SJiomayim Synagogue where the meeting takes place at 8 p.m.
ART LOVERS TAKE NOTE
■ This is a good weekend for art lovers — Beth Jacob V'anshe Driidz Couples Club is sponsoring a show and auction on Saturday.the 27thv at their synagogue, 147 Overbrook Place. It previews at 8 p.m. with the auction at 9.
That same evening another show and auction is being held by Danielle Chapter of B'nai B'rith Women at Banbury House. 120 Banbury Rd., Don Mills. Preview time is 7 p.m. and the auction at 8:30.
Then on Sunday, highlighting the annual tea of the Parents Association of the Associated Hebrew Schools will be the premiere showing of Gallery of the Arts, featuring the works of the parents themselves. Tea time is 2-4 p.m. at the school's Finch Education Centre. Gentlemen are welcome.
Sunday is also opening day for the exhibit of applique and embroidery hangings at the new Koffler Centre for the Arts at the northern 'Y'. It features the work of 'Y' faculty member Sybil Rampen. The show runs to Dec. 31.

CZF SPEAKERS BUREAU
Following the success of the August seminar for participants in the Canadian Zionist Federation's speakers bureau, another get-together has been planned for Wednesday, Dec. 1, at 8 p.m. at the Zionist Centre. The Committee for Soviet Jewry of Congress Central Region, headed by Sam Filer, has organized a series of meetings for the winter season through B'nai B'rith Men's Regional Council and its Soviet Jewr>' representative, Charles Goldlust. The idea is that each BB lodge will have at least one meeting with a. Soviet Jewrv' program and organize activity on behalf of a Prisoner of Conscience or a Refusenik.'

Shakshouka is an egg and tomato dish, beloved of Jews from North Africa. It is staple breakfast fare in cafeterias and buffets all over the countrv-, and appears in different guises and with various blends of seasonings and spices, depending on the cook.
Each cook will aver that his or hers is the original shakshouka. and that all others are mere imitations. ■ -J
A short while ago, after a visit to the tax authorities. 1 came upon a most attractive version of shak-shouka» when I tottered into a buffet in the same

building, to lecuperate.
Over a healing glass of tea. the girls behind the counter explained how to make their version of shakshouka, and I was back the next day with a photographer to see the finished article.
My dictionary defines lashakshek.- from which the word shakshouka comes, as meaning to flutter, rumble, or make a noise. The name of the dish probably refers to the way the cook shakes and tilts the pan to soften the vegetables or cook the eggs.
This purist version of shakshouka which uses only tomatoes andeggs is
S- 10 tomatoes, diced 6 eggs
salt, freshly ground black pepper
hot paprika
oil
1. make a thick sauce with half paprika and half oil. This mixture can be kept ready for use, in large quantities, in a screw-top jar; In a large pan or oven-proof dish, place tomatoes, half a cup water, salt, pepper, and 2-3 tablespoons of the paprika^oil sauce. Boil over a medium fire 20 minutes, uncovered
2. break the eggs carefully into the tomato mixture, and cook gently, covered, for 10 min utes till eggs are firm

Ruth Bass
At a recent convention of the Wo-men's League for Conservative Jiidaism at the Concord Hotel, Toronto's Ruth Bass was elected a Vice-president of the organization which boasts a world-wide membership of 210,000 synagogue women. A past president of Adath Israel Sisterhood, she headed the League's Ontario branch for many years.
Staff reporter Sheldon Klrshiier has
an article on Syrian and Egyptian Jewry in the November issue of Midstream magazine, published in New York City. He gathered his material in the course of a two-week assignment in the Middle East in the summer of 1975. Midstream is a widely-read periodical with a large readership throughout'the world.
A cocktail party with a Persian twist is the way Chaheen and Joe Levine are honoring Dorothy Shoichet, the new president of Women's Canadian ORT. Canadian artist Aba Bayefsky is having' his first show at the Ontario College of Art where he has been on staff for about.20 years. It is a 60-piece collection of watercolors and line drawings of Kensington Market scenes —- the people, signs and produce — all recollections of his youth and early

Kurdish Jews substitute sweet paprika for the hot paprika-4ised in the Algerian version, and Tu-
nisians and Moroccans use less tomatoes, andadd strips of green pepper, and onions. -In the Algerian version, the eggs are broken:care-fully into the cooked and thickened tomato pulp, and then the pan is covered and the dish cooked
until the eggs are firm. In other variations the eggs are broken; and stirred arouiid with a fork, then cooked until just set.
Shakshouka is eaten as a breakfast dish with a hunk of unbuttered bread. As a supper dish, it can also be accompanied with
a chopped vegetable salad and a dish of techina, ground sesame seed sauce.
Despite the fact that shakshouka sounds like a Jewish dish because of its Hebrew-soiinding name, it is likely that this dish, eaten allover North Africa, and other Middle East-em countries too, derives its name from an Arabic
word with a similar root.
My Larousse Gastrono-mlqne mentions^ Tchek-chouka made as follows: Sweet or strong peppers, torhatoes, zucchini and eggplant are cut in pieces and fried in olive oil with garlic and onion, the whole either mixed with beaten eggs or not, and cooked for a few minutes on a slow fire.

screens
TORONTO —
The Mount Siiiai Hospital has initiated a health screening, program in an effort to promote early detection of medical problems.
The program, launched last month, is operated by ' specially trained volunteers who man screening booths, located in the main lobby of the hospital, every few weeks.
Already, two days have been devoted to hypertension testing, where information on high blood pressure and heart disease has been distributed. Over 140 people visited those clinics.
Future plans call for similar screening of such problems as diabetes and obesity.
The hospital ran" a suc-cessfiil eye screening project last year and| broadened . its early detection program this year, to encourage prompt treatment of health problems and to avert hospitalization.
