for the avocados reign supreme
By MARCIA KRETZMER
JERUSALEM —
Winter in Israel, as in Canada, has its pluses and minuses. The minuses are well-known to every Israeli resident north of Beersheba: leaking roofs from several days' torrential downpour, rising fuel costs, power cuts, and drying laundry festooned around the apartment (few Israelis own dryers).
The pluses are those exhilarating days, bright with light, sometimes
crisply cold, frequently mellow and warm, when activity and energy seem to be at a maximum. Then there is the exciting discovery of wild flowers after each rainfall. And, of course, the seasonal bounty of fruits and vegetables.
Perhaps nothing spells the cosiness of winter evenings so well as glow-ings braziers of roasting chestnuts in the streets. In Israel, piping hot chestnuts sold in the streets are beginning to be popular.

bon appetit
Avocado Patc 2 avocados
I clove garlic, crushed
I small onion, grated
1 green pepper, diced very small
1 tblsp. finely chopped parsley
2 tblsps. lemon juice salt and pepper to taste I !2 cup plain yoghurt
112 cup creamed cottage cheese pinch chili powder
1. place in blender or mash together avocado flesh, garlic, onion, lemon juice, yoghurt, cottage cheese and seasonings
2. turn into a bowl or small platter and stir in chopped parsley and diced peppef". Serve with thin crackers, with celery sticks and black olives on the side ' .,
More frequently, they are roasted at home or made into other delicacies, and canrretl chestnut puree, used in mousses and other desserts, is a year-round import, especially popular with South Americans.
Another early winter favorite here is Gamba — sweet, round, red peppers. They make a dazzling hors d'oeuyre sliced in rings with green peppers, then steeped in a strong marinade.
/Voopular Israeli mode of ^^ing gamba is the shai^. spicy relish known in all communities as Salat Turqui. This is made from sweet red peppers — with the judicious addition of a hot chili pepper — stewed gently with onions, garlic and tomatoes until melted.
However for six months of the year, from fall until the following spring, avocados reign supreme as the greatest seasonal treat.
Now selling at an affordable price, avocados can be demoted from their party-piece status and eaten with toasted wholemeal bread for breakfast, mashed with cream cheese for a light family supper dish, or highly flavoured, mixed with chopped vegetables, and served as a dip for casual entertaining.
Here are three recipes for these winter brighten-ers. The yummy chestnut crepes can be quickly made and assembled if the crepe batter is prepared
. well in advance.
The avocado pate is an Israeli relation of that famous Mexican dip, Gua-camole. For true Guaca-mole,-leave out the yog-
' hurt and cottage cheese, and substitute four peel-

. tomatoes, and two tablespoons of olive oil.
