As a Shushan Purirri treat. I am privileged to bring readers an exclusive Interview with the renowned Cordon Bleu chef Maitre Blgthan, who recently became head chef at Israel's newest five-star hotel. The Grand Gevalt.
As we shared a quart of whisky In the hotel's luxurious lounge, which overlooks a dazzling" vista of Jerusalem's seashore. Chef Blgthan let me into some of his professional secrets.
The first involved the somewhat mysterious circumstance in which he left his previous position as retainer in the ,Royal

House of Persia. "I've held dozens of posts," the distinguished chef said, cleaning his fingernails fastidiously with a rusty-safety-pin, "but the post at Shushan was my longest — three weeks in all."
The' chef stressed his leaving had nothing to do with any current political scandals in Shushan. "My reasons for leaving were purely personal and professional. I found the local inhabitants had uncultivated palates," he explained, removing his right shoe and sock to scratch between his toes.

A round of disco nights, tennis tournaments and art shows are among the highlights planned for the 1978 Israel Bond campaign by the new leadership division, Co-Chalr-men Morris Saffer and Paul Orenstein announced after the opening cabinet meeting held recently.
Plans are well underway for a 10-day new leadership mission to Israel which leaves on May 7. the meeting was told. This trip will bring together young leaders from Canada, the U.S.and Europe for a tour to coincide with Israel's 30th anniversary celebrations.

Chef Blgthan had no doubts about his ability to master kosher catering now he is in Israel- "1 arrived in Israel bv wav of Nepal. While there. 1 underwent an Intensive crash course in kosher cooking at one of Katmandu's major yeshlvas." he said.

Israel some refreshingly modern Ideas about cook-.ing. "Recycling's all the rage now." said Chef Blgthan. "And in my own way I've tried to apply these ideas to cuisine. 1 generally find that people leave a large portion of what I serve them on their plates, and this can be recycled In many inventive and delicious ways. Indeed, I find I need Order only once from the suppliers from the time 1 take up a post, till the time 1 leave."
Chef Blgthan passed on some very worthwhile tips for Purim banquets, based on the principle that the dishes should be disguised so as to amuse the guests."

1. cream margarine with sugar, add beaten egg and mix well. Add vanilla, raisins, dates, almonds, flour, and baking powder and mix into a dough
2. take tsps. of the mixture and form into
balls. Roll in crushed cornflakes, and place in
muffin tins or on baking sheet. Bake till well
browned in a preheated oven at 375° for
15-20 mihs.

Which of^his repertoire of elegant dishes could be adapted for the average homemaker's use. I asked him. The chef thought for a moment, wiping his nose on his apron before replying. "Always start with simple things," he stated. "For instance, piping hot watermelon soup for winter evenings. You peel a watermelon thinly, leaving on most of the rind, but retain the peel. Cut the watermelon into five small pieces and place in a pot. Add salt and pepper to taste, and boil overnight. Next morning, strain off the liquid and discard, leaving the dregs."
But what, 1 asked him, do you do with the dregs? Chef Bigthan looked politely dismayed. "The dregs?" he asked. "Well, throw them out. of course. What else can you do with
dregs?".

As 1 left the Grand Gevalt. 1 happened to run into fellow food columnist Marcia Kretzmer, who asked me to pass on to readers this recipe for crisp little fruit and nut cookies. She says the sweetness of the dried fruits compensates for the small amount of sugar used.
